HOW IT'S DONE, CAFFEINE STYLE

You know when you make a simple meal that is so surprisingly good that you have to share it with the world? Or do you know when you have a coffee at 8pm when you otherwise never drink coffee? Or do you know when you plan a quiet Saturday night at home so that you can get lots done and instead just end up watching How the Grinch Stole Christmas?

Well anyway, here it is: cut some nice clean potatoes into tiny little pieces and chuck 'em in a pot of salted hot water so that they boil up nice and quick. Then chop up a shallot and put half onto a small piece of tin foil and set half aside. Also onto the tin foil put a couple smashed cloves of garlic and then roll it all up into a ball. Put the tin foil ball into the oven at 350°F until everything else is done. In a frying pan start browning big slices of sausage, to this add the remaining chopped shallot and also some chopped red pepper. After a minute or two add some coarsely chopped fresh tomatoes and some pepper and turn the heat down. Drain your cooked potatoes and mash up with your spoon or a wine bottle, adding a little olive oil, some butter, salt and pepper, grated parmesan cheese and your shallots and garlic from the oven, to taste. Top the mashed potatoes with the tomatoes and sausage and serve with salad.
